Hazelnut Gingerbread Cookies

I always remind my clients that there it’s absolutly no excuse to indulge in unhealthy foods for the holidays. There is always an alternative which is why you should try these excellent hazelnut gingerbread cookies:

Ingredients

  • 1/2 cup Hazelnuts
  • 1/2 cup Dates
  • 1/4 cup Vanilla Rice Protein Powder (Growing Naturals’ or Sun Warrior work best)
  • 2 Whole Eggs
  • 1 tbsp Coconut Flour
  • 1/2 tbsp Mixed Spice
  • 1 tsp Cinnamon

This recipe makes 12 cookies. Each cookie is about 210 calories each and have 14g of protein and are filled with excellent omega fat (good fat). These cookies won’t spike your sugar levels and hold water in your body due to the replacement of butter and white enriched flour with coconut flour and rice protein. 1 or 2 won’t hurt but don’t over eat them!
